Today, Ca’Pelletti operates five directly managed restaurants across Bologna, Padua, Milan and Bergamo Orio, serving more than 400,000 customers every year and selling hundreds of lasagne each month. More than a decade of hands-on operating experience has enabled the brand to test, refine and validate its business model, creating a solid platform for its next phase of growth.
STRATEGY ON THE GROUND: Ca’Pelletti has been designed for replication and scale. More than ten years of operating experience have been translated into a robust and transferable know-how platform, supported by standardised processes and a streamlined yet versatile menu engineered to operate without reliance on skilled chefs.
The use of high-quality, partially prepared ingredients ensures product consistency, protects margins and enables each restaurant to operate with non-specialist teams trained internally through innovative learning systems.
A dedicated logistics platform provides reliable and consistent nationwide supply. Since 2015, a continuous cycle of testing, learning and optimisation has strengthened the format across five company-owned restaurants.
Ca’Pelletti is now supported by a fully equipped Head Office, ready to guide franchise partners throughout the entire development journey—from site assessment and opening to training and ongoing operational support.
